It’s almost Cinco de Mayo and what better way to celebrate than by doing a super easy Mexico meal tonight! All you need is a couple of ingredients, a crock pot, and of course a couple of sombreros.
We at Hauser Estate are celebrating by having Chicken Tacos and Fiesta Salad:
5-6 frozen Chicken Breasts (You can do fresh chicken too!)
1 packet Taco Seasoning
1 16 oz jar of your favorite Salsa
Lay chicken breasts in bottom of Crock pot. Mix Salsa and Taco Seasoning together in a
separate bowl, and spread over Chicken. Cook on low for about 6 hrs, or on high for
about 4 hrs. After cooking remove Chicken from pot and shred. Spoon some of the
juices back onto the Chicken and mix together. Next up grab your taco shells and load them up with all of your favorite toppings!
Your favorite Mixed Greens (We usually grab 1 bag Lettuce and 1 bag Spinach)
1 can black beans
1 can of whole kernel corn
1 jar of your favorite Salsa
1 bag Tortilla Chips
1 bottle of Ranch salad dressing
a packet of your favorite shredded cheese
One of the reasons this recipe is so easy is you can add more or less of your favorite items depending on your taste!
Start by rinsing your greens and then lightly pad them dry with a paper towel. Place all the green in a large bowl. Open your can of black beans and drain. Rinse the beans and set aside to dry. Next open your can of corn and drain. Layer the beans followed by the corn on the greens. Open the jar of salsa and add a layer of salsa to the salad. Crumple the tortilla chips next and layer them on the salad. Finally pour the bottle of ranch dressing on a layer over the chips and sprinkle with your favorite shredded cheese.
