Cooking with Wine – Wine Cake

While I love drinking wine, cooking with wine can add depth and complexity to any recipe.  So with spatula in hand, I decided to make a cake using our Jennie Wade White.  I did some searching on recipe sites and came up with a generic wine cake recipe that could be shaped into what I wanted.

The recipe…

1 Box Yellow Cake Mix

1 Box Vanilla Pudding Mix – instant

4 eggs

3/4 Cup Vegetable Oil

3/4 Cup Jennie Wade White...or any white wine.

Nutmeg.  I used about 1 tsp.

1 box of yellow cake mix
1 box of vanilla pudding mix – instant
4 eggs
3/4 Cup Vegetable oil
3/4 Cup white wine…I used Jennie Wade White
Some Nutmeg

The steps…

Preheat oven to 350 degrees.

Grease and flour a bundt pan.

Blend cake mix, pudding mix, eggs, oil, wine and nutmeg in large bowl.  Beat with an electric mixer for about 5 minutes or until completely mixed up!

Mix all the ingredients.

Lick the beater…oh wait…you are not to do that! Oh well…

Pour into prepared pan.

Bake at 350 degrees for 45 – 50 minutes.  Let cool on rack for about 10 minutes before taking out of pan and slicing.  Serve with whipped cream and strawberries, or sprinkle with confectioners sugar!

Voila!  A basic yellow cake with lots of added flavor.  This can be adapted in many ways such as using apple wine and throwing in chopped up apples.  Or maybe a chocolate cake with Devils Den…oh the possibilities!
